Mike hails from the south side of Chicago, and this giardiniera is a nod to where he was born and his Chinese heritage. All made in house, this condiment starts with your familiar pickled ingredients - cauliflower, celery, fresno peppers and garlic. And to transform the giardiniera into something distinctly Chinese, Mike adds a combo of garlic chives for a boost of flavor, gai lan stems for more crunch, ginger, and 5 spice pickled red onions for punch.
Keep a deli container in your fridge, and add it to anything that needs a little extra acidic kick.
